The Saignée de Bisseuil cuvée from Champagne Antoine Bouvet comes from the Les Hautes plot, planted in 1964 in the Bisseuil terroir. This 100% Pinot Noir rosé de saignée is vinified without compromise, with zero dosage and natural fermentation .

Harvested in 2022 , bottled on June 6, 2023 , and disgorged on May 28, 2025 , this wine displays mineral tension , a firm structure , and aromatic purity . Total SO₂ is limited to 22 mg/L , and residual sugar is zero .
