This single-vineyard cuvée, "Le Bateau," is an ode to the purity of Chardonnay. Adrien Dhondt presents us with a Blanc de Blancs from an old vine planted in 1951 on the prestigious Grand Cru terroir of Cramant. Worked with immense respect for the soil (harrowing by horse), this wine reflects the outcrop of Kimmeridgian chalk. The vinification is remarkably pure: indigenous yeasts, barrel aging, and no filtration to preserve all the energy and silky texture of this legendary vineyard.

A complex nose blending white flowers and subtle brioche notes. On the palate, the attack is lively and creamy, carried by an intense chalky minerality and a persistent, almost saline finish, typical of the great terroirs of Cramant.

Its saline structure and mineral tension will pair wonderfully with seared scallops with fleur de sel, sea bass carpaccio with lime or even a 24-month aged Comté cheese.
