This Brut Nature, made using natural winemaking methods (unfined, unfiltered, undisturbed) and recently disgorged (February 2025), should present a profile of great purity and beautiful tension on the palate.

Visually: Brilliant color, fine and lively bubbles.

On the nose: The nose is likely to be clean and crisp, dominated by notes of fresh white fruit (green apple, pear), hints of citrus (lemon, grapefruit), and mineral touches (chalk, flint). The Pinot Noir (50%) provides structure and depth, while the Chardonnay (40%) lends finesse and freshness.

On the palate: The attack is dry and vibrant (Brut Nature), driven by a beautiful acidity and an ethereal texture. The finish should be long, clean, and very saline/limestone, reflecting the pure expression of the terroir.
Température de service Serving temperature: 10-13°
Thanks to its low dosage profile and great freshness, this Champagne is an excellent aperitif wine, but also pairs ideally with dishes requiring a sharp and mineral cut.

Aperitif: Ideal on its own or with fine appetizers such as oysters, sashimi, or light tarama.

Starters: Perfect with scallop carpaccio with olive oil and fleur de sel, sea snails, or raw langoustine.

Dishes: Sublime with simply grilled rockfish, sushi or dishes with iodine flavors.

Cheese: Try it on fresh goat cheeses or young Comté (less than 12 months).
