This 2018 Côtes du Jura is a dry white wine produced by the highly respected Domaine Macle in Château-Chalon. Made from Chardonnay grapes grown on clay-limestone soil, this wine is aged according to the purest Jura tradition, known as "sous voile " (under a veil of yeast). The wine is left in 228-liter barrels without topping up (without adding more wine), allowing a veil of natural yeasts to form on the surface. This extended aging process, lasting two to three years, gives the wine its aromatic complexity and unique richness.

A powerful and intense wine. The nose is dominated by the characteristic aromas of the flor: walnut, toasted almond, overripe apple, and a touch of spice (curry, hazelnut). The palate is crisp, very dry, and mineral, with a pronounced acidity that supports an exceptionally long finish.
