L'Abreuvoir is the result of a very particular winemaking philosophy championed by Gaspard Brochet of Domaine Les Croix. Its name evokes the watering holes where animals once quenched their thirst, a poetic image that reflects the intimate relationship this winemaker has with his terroir. This 2016 vintage champagne is made from a masterful blend of Pinot Noir and Chardonnay (70% PN / 30% CH), sourced from two high-quality Premier Cru villages: Écueil and Sacy, two communes renowned for the finesse of their sandy-loam soils.
Gaspard Brochet's approach is that of the "Art of making wine": a strictly traditional Champenois blended winemaking, unfined, undisgorged, and unfiltered. This minimalist approach allows the wines to retain all their natural integrity, their complexity, and that characteristic minerality that arises from the dialogue between Pinot Noir and Chardonnay on shallow, very chalky and limestone soils. The Extra Brut, with its almost minimalist dosage, allows the purity of the terroir to express itself fully.
On the palate, L'Abreuvoir reveals a bottle that has aged gracefully. The straw-yellow color with golden hues testifies to harmonious aging. The aromas develop complex notes: brioche, hazelnut, delicate dried fruits, persistent mineral nuances. The texture is fleshy without being heavy, with a beautiful vivacity on the finish. It is a champagne for contemplation, which benefits from being tasted with patience and reflection. A beautiful example of what a passionate winemaker who scrupulously respects the principles of natural winemaking can offer.
