The La Cène 22 cuvée from Domaine Julian Goût is a Blanc de Noirs (Pinot Noir) Champagne, produced in a limited run of 2,400 bottles and 172 magnums. The wine is made from a massal selection of Pinot Noir vines dating back to 1971, planted in the lieu-dit "Les Milieux" in Romery. The vineyard has been undergoing conversion to organic farming since 2021. This Champagne is vinified with the utmost care: a traditional press (2,000 kg), the use of homeopathic doses of sulfur only during pressing, and aging on whole lees by gravity. Disgorging and riddling are done manually, and the dosage is very low, making it an Extra Brut.

Tasting profile
A wine of beautiful aromatic intensity, typical of Pinot Noir: notes of red fruits (cherry, raspberry), peach, and light spicy touches. The palate is structured, vinous, and balanced. The Extra Brut gives it a dry and elegant finish with a refreshing minerality.
