This "Chantemerle Gourmandise" Rosé Extra Brut Champagne is the work of Julien Prélat, a winemaker in Celles-sur-Ource, in the Aube region (Terres de l'Aube). Made using sustainable viticulture practices and from a plot planted in 1982, this Blanc de Noirs (100% Pinot Noir) is made from the 2022 vintage, grown in typical Kimmeridgian clay-limestone soils. Its vinification in small stainless steel tanks with malolactic fermentation and the addition of 10% Coteaux Champenois grapes give it a rich and structured character, underscored by a very low dosage (Extra Brut). This limited edition of 1,310 bottles was disgorged in March 2024.

A rich and structured rosé made using the saignée method. The nose is intense with aromas of fresh red fruits (wild strawberry, raspberry) and a touch of spice. The palate is full and vinous, with a lovely structure and a lively, saline finish thanks to the low dosage.

Ideal with spicy Asian cuisine (wok, tempura), roast or lacquered poultry, tuna tartare, or red fruit desserts (raspberry tart).
