This "La Lemillée" Blanc de Blancs Champagne is a rare find, crafted by Julien Prélat in Celles-sur-Ource (Aube). It is remarkable because it is made entirely from Pinot Blanc , a rare grape variety in Champagne, sourced from a plot planted in 2000 and harvested in 2020. This grower Champagne, produced using sustainable viticulture practices, is aged on its fine lees after malolactic fermentation, with a split vinification process: 50% in oak barrels and 50% in tanks. This limited production (1040 bottles) was disgorged in April 2025. The terroir is characterized by Kimmeridgian, clay, and limestone soils.
