This Coteaux Champenois Blanc is a rare and original still wine, crafted by Karine Prélat in Celles-sur-Ource, in the heart of the Côte des Bar in the Aube region. It is from the 2021 vintage and is distinguished by its unusual blend of three grape varieties in equal proportions: Pinot Blanc, Petit Meslier, and Chardonnay. The wine underwent careful aging for 10 months in 225-liter foudres (large casks), part of which took place in a "K Egg" (likely an ovoid tank) with vinification on its lees in natural suspension. This white wine from the Coteaux Champenois appellation is produced in small quantities (511 bottles bottled on July 27, 2022) and reflects a passionate and sustainable approach to viticulture.
