Description

This cuvée is a true journey through time. Named "Les 7" (The 7), it is the fruit of a plot located in the Chavot terroir where the Laherte brothers replanted the seven grape varieties authorized in Champagne, including the "forgotten" ones (Arbanne, Petit Meslier, Pinot Blanc...). Cultivated with complete respect for life, these vines offer a unique blend, complemented by a perpetual reserve begun in 2005. Vinified in barrels with spontaneous fermentations, this champagne is an ode to the complexity and history of the region.

A kaleidoscopic nose where exotic fruits, honey, smoky notes and a touch of beeswax mingle. The palate is ample, deep and vibrant, carried by a noble acidity and an almost tactile texture.

Its aromatic richness calls for dishes with character: poultry with morels, a risotto with white truffles or an old Beaufort cheese from the mountains.
