This "Les Vergers" Champagne is an Extra Brut Blanc de Blancs produced by the Ponsart winemakers in Janvry, using 100% Chardonnay grapes . Originating from the Germigny terroir (Western Marne Valley), on southeast-facing slopes, it takes its name from the presence of former orchards. The winemaking process is particularly meticulous: spontaneous alcoholic fermentation , malolactic fermentation , and aging in oak barrels . The very low dosage of 2 g/L (Extra-Brut) , combined with production without filtration or cold stabilization, results in a wine of great purity and expression, faithfully reflecting the identity of its terroir.

Aging in oak barrels and malolactic fermentation give this Blanc de Blancs a lovely roundness and complex aromas of dried fruit, brioche, and subtle hints of wood or vanilla. On the palate, it is structured, full-bodied, and generous. The very low dosage (2 g/L) provides a tension and purity that perfectly balance the richness imparted by oak aging, with a persistent, mineral finish.
