The 2020 Les Terres Froides cuvée from Champagne R. Pouillon & Fils is born in a haven of peace, on the edge of the forest in Hautvillers , in the heart of the Montagne de Reims . The northern exposure and the chalky subsoil give the wine their tension and their singular brilliance.
Made from 100% Chardonnay , this champagne is vinified by hand in stirring and barrels , according to the Fabrice Pouillon Method . The fermentation is carried out with sugar and natural yeasts from the grapes. The very low dosage (1 g/L) is planned for the first quarter of 2024 .
