The 3P/20 Extra Brut cuvée is an original blend created by Simon Rion in Courmas , in the Montagne de Reims. It brings together three plot identities from the 2020 harvest: 1/3 Larmes de Meunier , 1/3 Larmes de Pinot Noir , and 1/3 Les 2 Parcelles .
The viticulture is entirely mechanical with natural grassing between the rows, promoting biodiversity and respect for the soil. The wine is vinified and aged for 22 months in 228-litre oak barrels , chilled during the winter, without fining or filtration .
Disgorged in February 2025 , it receives a minimum Extra Brut dosage of 1 g/L based on wine liqueur. Ultra-confidential production of only 324 bottles .
