Simon Rion , an independent winemaker in Courmas , offers a balanced expression of the Montagne de Reims terroir with his Réserve Extra Brut cuvée. The clay-limestone soil enriches a precise blend based on 60% of the 2011 vintage and 40% of a perpetual reserve .
The wine is a blend of 50% Pinot Meunier , 30% Pinot Noir , and 20% Chardonnay . Vinification takes place in stainless steel and concrete tanks with malolactic fermentation . The dosage is minimal: 2.8 g/L , derived from a concentrated liqueur (600 g/L), for a clear expression of the terroir. Disgorgement was carried out in April 2022 .
