Description

An exceptional and philosophically unique vintage by Simon Rion: the "Réserve", a perpetual wine champagne that embodies temporal continuity and the heritage of a vineyard. This rare approach blends vintage and timelessness.

The composition reveals a poetic oenological philosophy: 60% of the 2012 harvest – a classic Courmas vintage composed of 50% Meunier, 30% Pinot Noir, and 20% Chardonnay – combined with 40% perpetual reserve, this timeless wine that Simon Rion maintains year after year, giving each cuvée historical depth.

Vinified in stainless steel and concrete tanks to preserve freshness and minerality, the wine underwent full malolactic fermentation and a remarkable 68-month aging on lees in the cellar. This extremely prolonged maturation develops remarkable aromatic complexity, richness, and integration. Disgorged in November 2019, with a dosage of 6 grams in Brut, this champagne offers that slightly tempered sweetness that accompanies the wine's age and maturity.

It's a philosophy: perpetual wine symbolizes the continuity of the winegrower's work, intergenerational transmission, and respect for time and terroir. With its 12.5° alcohol, it is a champagne of depth and contemplation, carrying a sincere winemaking history.
