Simon Rion , an independent winemaker in Courmas , offers a balanced interpretation of the Montagne de Reims terroir with his Réserve Extra Brut cuvée. The clay-limestone soil enriches a precise blend based on 60% of the 2011 harvest and a 40% perpetual reserve .
The wine combines 50% Pinot Meunier , 30% Pinot Noir and 20% Chardonnay . Vinification is carried out in stainless steel and concrete vats with malolactic fermentation . The dosage is minimal: 2.8 g/L , from a concentrated liqueur (600 g/L), for a clear expression of the terroir. Disgorging carried out in April 2022 .

Tasting profile
A nose of dried fruits , candied zest and patinated minerality . On the palate, gentle tension, beautiful aromatic completeness and a chalky finish . A cuvée of discreet finesse, ideal for a contemplative tasting.
Food and champagne pairings
Serve with roasted poultry with herbs , a thin leek tart or a Champagne ash . Its suppleness and purity go well with dishes with vegetable or dairy notes.
