This Grand Cru Champagne is a pure Blanc de Blancs (Chardonnay) from the "Les Hautes Mottes" plot in Le Mesnil-sur-Oger , one of the most emblematic villages of the Côte des Blancs. Crafted by Stéphane Regnault , this "Mode Dorien N°80" cuvée is based on the 2018 harvest, complemented by 14% reserve wines. Vinification is natural (spontaneous fermentation), with significant aging (85%) in oak barrels and complete malolactic fermentation. With a dosage of 1 gram per liter , it is classified as Extra Brut Champagne and was disgorged in June 2024 .
