Domaine Nowack 's Autre Cru Extra Brut cuvée is made from 100% Meunier grapes from plots on the left and right banks . The presence of trees and animals in the vineyard is an integral part of this holistic approach that seeks to reconnect the plant to its mineral and living environment.
The wine is born from a slow and complete indigenous fermentation , without artificial intervention, according to the simplest rules. It is then aged in oak barrels to refine its texture and preserve its raw energy. It is disgorged in August 2024 and lightly dosed at 1.6 g/L to let the fruit speak.
